Make in 40 minutes (25 mins preparation and 15 mins cooking time)
Serves 4
This is a simple vegetable side dish using bhindi, also known as okra or ‘ladies’ fingers’. Bhindi has a distinctive taste and texture and is often cooked so that it is soft but retains a slight crunch. You can cook it a little longer for a softer texture. Cut the bhindi in half and then length-ways to produce delicious strands. If you need help cooking watch out for our videos coming soon to YouTube.
Ingredients
– 300g bhindi
– 4 cloves garlic
– 2 medium-sized onions
– 3 chillis
– 1 tomato – chopped into small pieces
– handful of coriander
– 2 ½ tbsp olive oil
– ½ tsp jira seed
– 1 tsp salt (heaped)
– handful of coriander
Powdered spice
– ½ tsp turmeric powder
Preparation
– Peel and chop garlic finely
– Chop onions finely
– Cut the tops and bottom off bhindi
– Cut the bhindi in half and then slice length-ways to make strips
– Cut tomato into small pieces
– Cut chillis in half and slice length-ways
– Slice coriander finely
Cooking
1. Add 2 ½ tbsp oil to non-stick pan over medium heat
2. Add jira seeds
3. Add the garlic and stir gently. When garlic is slightly golden, add the onions.
4. Add 1 heaped tsp salt, reduce heat slightly.
5. Add chopped chillis
6. Cover pan with lid and leave to cook until onions are slightly golden
7. Add ½ tsp turmeric powder and stir gently.
8. Add all chopped bhindi. Stir gently using wooden spoon.
9. Cover with lid and leave for a few minutes on medium heat.
10. Add tomato pieces and half of the coriander. Stir gently for a few minutes.
11. Add remaining half of coriander
12. If you prefer the bhindi to be even softer, you can cook for a further few minutes.
